Best way to book travel from one European country to another?

I'm gonna stay in Florence, Italy for ten weeks and will travel to different destinations weekends while I am there. What is the best / cheapest way to book vacation packages to different destinations (ie, London, Dublin, Sicily, Paris, etc.) while you're there? I know that air travel abroad is relatively cheap but I was wondering if there are websites such as we have here in the U.S. where you can reserve an entire package, and if what I'm looking for budget travel as much as possible (although there are no shelters). Have a budget of around 350 euros per weekend to travel, stay, eat and sights to see, so I'm looking for budget-conscious options. Thanks for the help!
