Holidays-Greece, to book or no book, That's the question?

I am planning a trip to Greece in late August, early September for about 3 weeks with a friend who has family in small villages in the south. We spend a few days with his family, but I also want to experience Athens Islands (Santarini sure!) Like a real tourist with some hiking, camping , A resort or hotel here and there. What is the best way of this plan? Can you get a flight / hotel package with no return flight home on schedule or only fly up there and look for packages and tours when we are there? Is it easy to find and book tours island once you're there or is a better idea to book before you get there? (ps it is always cheaper the better) Please suggestions!
